INGREDIENTS
- 1 cup Rice flour
- 1 cup Grated jaggery
- 2 tbsp Maida
- 1/2 tsp Baking powder
- 2 big ripe bananas
- 1 cup Water
- 6 nos cardamom pods
- 1/4 tsp Salt
- 2 tbsp Ghee
- 1/4 tsp Ginger powder
INSTRUCTIONS
- Crush the cardamoms and mix all the dry ingredients, except baking powder.
- Grind bananas into a paste and add it to the dry ingredients.
- Add melted jaggery and ghee to the mixture and mix well.
- Fry thinly cut coconut pieces in 2 tsp of ghee till its golden brown and add this and sesame seeds to the batter and mix well.
- Let this sit undisturbed for atleast 2-3 hours. I kept it overnight in a fridge and made it in the morning.
- Lastly add baking powder and mix well. It should have the consistency of a dosa batter.
- Heat the appe pan and pour oil or ghee and fill just below the brim.
- Once the oil is nice hot, start pouring the batter in each of the mould. Lower the flame and let it cook. Turn the sides and cook till dark golden brown.
